Coconut Chilli Chicken

Ingredients
- 1 Jar of Wiga Wagaa Coconut Cooking Sauce
- 500g chicken breast or thigh - cut into thin 1 inch pieces
- ½ medium size onion – cut into small pieces
- ½ each of small red and green peppers – cut into about 1 inch cubes
- 4 tablespoons of sunflower oil
- 100ml of water
- Fresh Coriander – to garnish
Method
- Heat the oil in a medium size pan until it is hot
- Add the onions stir for 1 minute; add half of the peppers stir for 30 seconds
- Add the chicken and stir for about 2 minutes
- Pour in the Wiga Wagaa Coconut Cooking Sauce followed by the water and stir
- Simmer gently for about 15 minutes
- Add the rest of the peppers and simmer for a further 5 minutes
- Add more water if you need to but not too much
- Garnish with the coriander.
- Serve hot on a bed of pasta, rice or cous cous
