Coconut Chilli Chicken

½ Jar of Wiga Wagaa Coconut Cooking Sauce
500g chicken breast or thigh – cut into thin 1 inch pieces
½ medium size onion – cut into small pieces
½ each of small red and green peppers – cut into about 1 inch cubes
4 tablespoons of sunflower oil
100ml of water
Fresh Coriander – to garnish
Heat the oil in a medium size pan until it is hot
Add the onions stir for 1 minute; add half of the peppers stir for 30 seconds
Add the chicken and stir for about 2 minutes
Pour in the Wiga Wagaa Coconut Cooking Sauce followed by the water and stir
Simmer gently for about 15 minutes
Add the rest of the peppers and simmer for a further 5 minutes
Add more water if you need to but not too much
Garnish with the coriander.
Serve hot on a bed of pasta, rice or cous cous
