Wiga Wagaa Curried Chicken Thigh

Ingredients
- 500g of chicken thigh cut into small pieces about 1 inch in length
- Medium size onion cut into small pieces
- Tablespoons of rapeseed or sunflower oil
- 1 Jar of Wiga Wagaa African Curry Paste - mixed with 50ml of water
- Fresh Coriander finely chopped
Method
- Heat the oil in a frying pan and fry the onions for about 1 minute
- Put the chicken thighs in with the onions and fry for 3 minutes, stirring regularly
- Pour the Wiga Wagaa African Curry Paste water mix into the pan. Stir well. Simmer gently for 20 minutes or until cooked.
- If there is not enough juice left at the end, add some water to your desired consistency
- Garnish with fresh coriander & serve hot on a bed of rice or with pasta
