Scotch bonnets are, to the West African, what the habanero is to the Mexican. Also the pepper of choice in the Caribbean, these delightful little mouth bombs can clock up between 100,000 and 350,000 Scoville units. But it’s not just spice that have made these peppers a firm fixture in West African and Caribbean cuisine. Their sweet fruity flavour (scent undertones of apple and cherry) rounds out the palate and offers a tropical dynamism to any dish.
